3 1/2 | cups | all-purpose flour | |

1 | teaspoon | ground cinnamon | |

1/2 | teaspoon | baking soda | |

1/4 | teaspoon | salt | |

2 | medium tart apples, peeled and chopped | ||

1 | cup | raisins | |
|
|||
1 | cup | chopped walnuts | |
|
In a mixing bowl, combine the eggs, sugar, buttermilk, mayonnaise and vanilla.
Combine the flour, baking powder, cinnamon, baking soda and salt; add to egg mixture and beat just until combined. Fold in the apples, raisins and walnuts. Spoon into two greased 8x4x2-inch loaf pans.
Bake at 375 F. for 1 hour or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
*No buttermilk? Substitute 1/2 tablespoon lemon juice and enough milk to make 1/2 cup.
